ACHIEVING A MOUTH WATERING RED ONION PICKLING RECIPE

You will be using only a few ingredients to achieve this mouthwatering easy pickling; (white wine vinegar, honey or maple, dill, lemon peel and salt)

Why do I like local honey? The sweetness of the local flower come through and add a whole new dimension to the pickling.

You can flavor your pickling any way you want, but this is my favorite combination because of how fresh tasting it is and how it compliments the many dishes I make.

WHAT IS THE TIME NEEDED TO ACHIEVE AN EASY AND DELICIOUS RED ONION PICKLING?

This easy recipe will not take long, you just need to allow the mixture to rest and let the ingredients merge into a fabulous fresh flavor. You should have the recipe ready in 25 minutes.

I have tried other vinegar types like red wine vinegar or apple cider vinegar. They are too strong, taking over the flavor and not allowing the balance of flavors like white wine vinegar.

When using subtle flavors like herb or lemon peel, you want the balance to be just right in order for them to shine through.

Experiment with Unique Flavors.

Experiment with different flavors like sage and peppercorn or elephant garlic to bring the sweetness of the red onions. You can even add some hot pepper with the garlic for that spicy note! Look in your garden for the herbs you have and don’t be afraid to try a combination of your own easy recipe. The combination may surprise you!

Few Ingredients for achieving a easy and delicious Easy Pickled Red Onion

  • 25 oz. Glass jar: Make sure you use a glass mason jar with hinged lids. The metal lids may corrode with the acid. The rubber on the jar will make it airtight.
  • Red Onion: One large red onion for a 25 oz jar or two medium onions.
  • Sweetener: I love using local honeys, if possible, to taste subtle taste of local flowers. I love going to farmers market and trying a new flavor when I can! Delicious! But you can use any honey or even good quality maple syrup.
  • Fresh Dill – 2 sprigs
  • Fresh Lemon: 2 pieces Lemon zest
  • Salt – I used kosher salt but sea salt is also great.
  • Ice – 2 cups
  • Boiling Water – Enough to cover the onions
  • Cold Water – Enough to cover the onions
  • Champagne Vinegar or Cherry Vinegar – 2 cups
  • Peppercorns
  • Pestle
  • Mandolin
  • Knife
  • Sauce Pan
  • Colander

Pickling is a great way to use the herbs you grow in your garden.

FIRST STEPS FOR A GREAT PICKLING.

  1. Slice the Red Onions. With a vegetable slicer, or knife, slice your red onions thinly or use a mandolin to slice. The consistency helps with a uniform pickling throughout, but it is not required. Here is where you can save time, the thinner the onion is sliced, the quicker it will take the flavor as it marinates and pickles. The yummy flavors will blend beautifully!
  2. Place Vinegar, Salt and Honey in the Pot. Place on medium heat until the ingredients dissolve. This will not take but a few minutes, the vinegar will help dissolve the salt and honey.
  3. Place Mixture in the refrigerator. Let the mixture cool off, it doesn’t need to be cold, just not hot so it won’t cook the onions.
  4. Boil water in Saucepan. The next two steps will assure that the onion will soften quickly while keeping a little crisp texture. Boil enough water to cover the onions.
  5. Place Red Onion in a Bowl and Pour the Boiling Water from the saucepan to cover. Let the water stand for only a minute to soften the onion. Immediately pour the content to a colander. Another option is to pour the boiling water in the directly on the onions in a colander. Add ice on top to stop the cooking process and add cold water to cover the onions. You just want to soften the onion not cook it. You can stir the onion around to get the cold water throughout. This step should only take a couple of minutes.

SECOND STEPS AFTER GETTING ONIONS AND MIXTURE READY TO PLACE IN THE JAR.

6. Place ingredients in the mason jar. Place your onions and vinegar and stir to dissolve. A good trick to get that lemon flavor we love is to twist the zest and place it in the mason jar. This will get the natural oils activated and the flavor will come out quicker. After you have added the vinegar mixture you prefer, use a pestle to gently mash the onions, dill and lemon zest to soften and speed the pickling process. Be gentle, just do it until the onions are below the line of the vinegar mixture.

7. Spices: Add your spices, peppercorn, garlic, dill, sage. Whatever flavor are your favorite.

8. Pickling. Let the ingredients rest in the saucepan for about an hour. After the hour remove the lemon peel and dill and add fresh ones to store.

9. Serve your exquisite recipe and enjoy! Refrigerate! Keep your mason jar in the refrigerator, make sure it is sealed. The pickling can be kept refrigerate for about 2 week. I like to replace any soft herbs to keep it fresh and enjoy it.

Easy and Delicious Red Onion Pickling with Lemon Zest and Dill

Equipment

  • Mandolin
  • Pestle
  • Glass Jar with Rubber Sealer
  • Small Pot
  • Colander
  • Bowl
  • Measuring Spoons
  • Measuring Cup

Ingredients
  

  • 1 25 oz. Glass Jar with Rubber Sealer Do not recommend metal lids, the acid will corrode with time.
  • 2 Medium Red Onion
  • 2 Sprigs Fresh Dill You may want to keep more available to replace every 2 to 3 days on your jar.
  • 2 Zest Lemon Peel Make sure you don't get the white part, only use the zest for freshest taste.
  • 1 1/2 tbsp Salt Kosher Salt or Sea Salt
  • 2 tbsp Local Honey
  • 2 Cups Ice
  • 2 Cups Boiling Water Enough water to cover the Onions fully.
  • 2 Cups Cold Water Enough water to cover the Onions. Tap water will work.
